- 1 ear of corn
- 1 medium zucchini
- 4-6 red potatoes
- 4 cloves garlic
- ½ lb uncooked shrimp
- 2 andouille sausage
- 1 teaspoon Old Bay Seasoning
- 1 teaspoon Cajun seasoning
- 4 tablespoons butter
- Fresh parsley, chopped
Instructions:
- Start by washing and drying all of your produce.
- Cut the corn into eight pieces, Halve and thickly slice the zucchini, and cut the potatoes into quarters. You can mince your garlic cloves, or you can use pre-minced garlic to make the experience at the campground easier. I generally use the pre-minced kind.
- Peel and devein a shrimp and cut the sausage into coins.
- Next, you’re going to create your foil packets by tearing 4 18” pieces of heavy-duty foil. We are a cut of parchment paper over the top of the foil.
- Divide the corn, zucchini, minced garlic, shrimp, spices, and butter among the packets and stir to coat everything in the seasonings.
- Carefully fold up the edges of the packets and seal them to ensure no steam escapes.
- Add to your grill or campfire for eight minutes, being sure to flip occasionally to cook it evenly throughout.
- Once the shrimp and sausage are heated through and the vegetables are soft, remove from the grill and allow to cool slightly. Serve hot and topped with a sprinkle of fresh parsley and extra Cajun seasoning.
